Our Story


Wildest Greens was born out of owner Denise DuBarry Hay’s love of health and wellness – fervently believing our bodies are at their optimum when we eat clean, detoxify and incorporate exercise into our daily lives.

Denise’s pursuit in sharing this passion with the community started when she opened Bikram Yoga Plus  in January 2011, incorporating her 35+ years of experience in the yoga industry.  The Palm Desert yoga studio offers yoga for all levels as well Hot Pilates, Trapeze Yoga and Booty Barre classes.

“You can exercise like crazy but if you’re not eating right, you’re not giving your body everything it needs to build healthy cells which make up our organs, skin, muscles basically our bodies. You need proper nourishment to have optimal health.” Denise recognized there were very few restaurants dedicated to fresh and organic farm-to-table fare.

A self-described “serial entrepreneur,” Denise is always looking for her next venture, and felt called to bring the Coachella Valley a dining option modeled after her own kitchen – offering the kind of healthy and delicious foods and beverages that she and her family have fueled their bodies with for years.

 

Wildest Greens is truly a dining venue unlike any other in the desert. It offers highly-skilled fusion techniques using organic, nutritious ingredients to create some of the tastiest healthy dishes your palate has ever had the pleasure of savoring. Straight from the field to the fork, the best you can get. No preservatives are used.

Denise lived a farm-to-table lifestyle far before it became a culinary trend. She grew up on a banana plantation in Honduras, and used to spend time picking snap peas and shucking corn on her grandparents’ farm in Louisiana as a child. Denise and her family even own a citrus and turmeric farm in Kauai. In fact, turmeric from their family farm – including a particularly rare variety, white turmeric – is shipped directly to the restaurant, ensuring that customers have the freshest harvest of turmeric product in their dishes and beverages.

 

The restaurant is yet another way her bond with the soil of the earth is manifested. Patrons enjoy fresh raw cold-pressed juices and organic coffees, teas and wines plus house-made kombuchas on tap along with gourmet menu items to fit most healthy eating styles – such as raw, vegan, gluten-free, and paleo.

Denise is also all about doing her part to save the environment. The restaurant uses compostable straws, paper products and glass bottles for juices instead of plastic. Customers can bring them back in and recycle them when they are done.  Bottled juices, tonics, and nut mylks offer a broad range of selections for nourishing and detoxifying, and have a shelf life of 2-4 days.

Because most of the restaurant’s menu is raw, fresh and organic, Denise has implemented the Hazard Analysis and Critical Control Points (HACCP) preventative food safety system – the highest standard of food safety in the industry.

The restaurant features an education station where you can learn more about how to eat in a way that nourishes and detoxifies your body, and offers periodic educational events.
